Pit cooking is fast becoming a popular way to barbecue in Australia. It differs from the grille barbecue that Australians are usually more used to in that it works with indirect heat rather than direct heat. This gives scope to cook "low n slow", and to roast much larger pieces of meat.


Traditionally, pit cooking works by digging a hole in the ground. This is great for some, but in 21st century not everyone has the space for this, nor the accommodating spouse. What then? Do you really want to forego tender succulent slow-cooked meat, cooked outdoors on a lovely day with cold drinks and the best of friends? Is this something you really want to miss out on?
