When chef Tim Meyers, formerly of Eleven Madison Park, Blanca, Glasserie, and others, sought to open his farm-to-table restaurant in Williamsburg, he turned to Mammoth, a New York-based design-build studio founded by Maryana Grinshpun and Jessica Maktal. He tasked them with transforming a former fast-casual Chinese restaurant into an intimate dining experience that reflects the spirit of the food, engages the senses, and captures the bucolic essence of Upstate New York, his place of origin, with a contemporary twist. To achieve this, Mammoth researched 19th-century restaurants before globalization and art ranging from Andrew Wyeth to Dutch still-lifes and incorporated these references with local materials like brick, aluminum, and oak.

This material mix is enhanced by a series of lighting fixtures, creating reflections that resemble the city's vibrant nocturnal life. The space offers diverse seating layouts for varied dining experiences. Brewing tanks are spotlighted, and the brewing process is celebrated with malt showcased on the feature staircase.

The Seven Beer Garden Restaurant
The Seven Beer Garden restaurant was inspired by the renowned animated film Lucky Luke. The restaurant's space stands out with cowboy imagery, windmills, steam trains, and desert landscapes, all perfectly recreating the American Wild West.

The design story of The Seven Beer Garden is shown cohesively and consistently throughout the space. The overall restaurant space recreates a train station in the American Wild West with a classic, strong style expressed through contemporary European architecture language and minimalistic lines. The dominant colors of the project are the brown and yellow of natural wood, familiar materials of the Wild West.
