Edegem, December 2019 - STABLE has moved into the eastern carriage house of castle Hof Ter Linden in Edegem. This intuitive dining concept is a creation of the trio Njegos Kalicanin, Goran Stamenkovic and Aleksandar Davidovic. Chef Njegos Kalicanin serves a fresh and honest cuisine; an ode to pure flavours with great attention to the origin of the ingredients in the form of fixed menus at €59. No fuss. No musts. Renowned architect Dieter Vander Velpen was hired to design the interior of the restaurant. Vander Velpen translated the trio’s no-nonsense vision into a breathtaking interior with raw, natural materials and endless respect for the authentic elements. Past and present blend seamlessly. STABLE was realized in close collaboration with Edegem, Kempens Landschap en Agentschap voor Natuur & Bos.


STABLE found shelter in the former stables of the majestic castle Hof Ter Linden, a neo- classical gem in Edegem just south of Antwerp dating from the 17th century. The castle grounds are hidden at the end of a beautiful avenue lined by monumental Lime trees, to which the castle owes its name. Founders Njegos Kalicanin, Goran Stamenkovic and Aleksandar Davidovic were led to this place by their instinctive urge for nature, the unspoild and all thing genuine. Their ambition with STABLE? To put the intriguing domain on the map (inter)nationally with a large, food-loving audience.


Architect Dieter Vander Velpen - who is known for his design of the Tomorrowland headquarters, among others - chose to optimally respect the historic character of the coach house and to complement it with modern elements. The essence of the interior is the power of simplicity and nature. Vander Velpen uses only raw, noble materials such as wood, natural stone and bronze. The result is a harmonious interplay between old and new and between light and darkness.
From a daring obstinacy a handful of eye-catchers demand all attention. Take for example the fireplace, the large wall mirror or, the bar designed by Arno De Clerck who, as a designer, carries out projects for the biggest world stars in America.


In this unique setting, chef Njegos Kalicanin serves his typical cuisine; pure, honest and straightforward. Kalicanin - world famous in his homeland as a TV chef - cooks solely on instinct. He invites his guests to surrender to his intuition and let themselves be completely immersed. Expect particularly stubborn dishes, intense flavours and surprising combinations. Kalicanin currently runs brasserie Pastis in Mortsel and has worked as a guest chef with the culinary elite of Europe for the past decade. Experiences that will prove very useful in this new adventure. In the longer term, STABLE aims to work with multiple chefs in residence: top chefs from all over the world who will be invited to cook in the gastronomic stables in Edegem for a certain period of time.


STABLE serves both lunch and dinner. Guests can opt for a table in the dining hall or for a unique experience in the intimate privacy of the chef’s table, with a view of the impressive open kitchen. Kalicanin works with fixed menus of €59 pp, which are regularly updated. A quick first look at the menu: delicious marinated salmon with citrus dashi and sweet potato to start. The main course is the barbarie duck breast, tamarin cream and Jerusalem artichoke. A piece of lemon cake and basil ice cream to top it all off. Respectively served with a Terra Rossa Sauvignon Blanc 2017, the Centpourcent 2010 and a glass of Umechu Yuzu. We will leave the entremets and the side that comes with the coffee a surprise.
