Award winning chef Joost Arijs, crowned in the past Best Pastry Chef in Belgium and Best Chocolatier of the Year, runs an eponymous, specialist, high end patisserie in the centre of Ghent. When the business decided to expand with a second location, taking over the retail unit next door to its existing flagship, Glenn Sestig Architects was called upon to create the interior for a new bakery.
The design is powerful in its simplicity. The concept is built around a key centrepiece; a bespoke piece of furniture that combines counter, storage, and pastry display cabinet. The object, made of cool stainless steel, is inspired by timeless, modernist shapes – hinting, in an abstract, minimalist way, to the geometric composition of a mid-century villa. Bread is stocked on shelves behind it. Production takes place at the rear of the property, but an open plan arrangement means customers can admire the bakers at work throughout the day.
