Since the restaurant is named “Zaman”—meaning time—its architectural narrative is inherently intertwined with reflections on temporality. The past is a fleeting instant that has already slipped away, while the future embodies our hope for the moments yet to come. The “now” is a delicate tangent touching both spheres of past and future, an ever-moving boundary where the future continuously transforms into memory. Akres

The architectural design of AKRES restaurant, undertaken by Minas Kosmidis Architects near the Acropolis of Lindos, seamlessly integrates the past and present, tradition and the modernized image of the island. The design spans an area of 200 square meters, with the existing shell of the building kept intact to accommodate the contemporary approach of the interior. The primary goal was the perfect harmonization of the restaurant with the landscape, achieved through the selection of rough surfaces, earthy colors, and warm lighting that embody the essence of Lindos. ADACCIO RESTAURANT

Designed in late 2025, Adaccio is a contemporary Italian restaurant created for the transformation of an existing hospitality space in Koblenz, Germany. Spanning 430 square meters across two levels, the interior combines refined dining atmosphere with a more vibrant evening identity. Warm oak textures, deep green marble, brass accents, velvet upholstery, and integrated greenery create a layered and immersive hospitality experience. In Milan, Rodrigo is conceived as an interior narrative suspended between memory and contemporary hospitality. Designed in 2024 by Nick Maltese Studio, the restaurant reinterprets the legacy of the historic Rodrigo in Bologna, founded in 1949, translating it into an immersive spatial experience where architecture, atmosphere and conviviality become part of the same story. The project unfolds as a sequence of spaces, almost like scenes in a film. Guests enter through the bistrot, move through the bar and gradually reach the more intimate dining rooms. Nube 7 café has been operating since 2008 within the Museo Universitario de Arte Contemporáneo, a cultural and artistic space in Mexico City designed by the renowned architect Teodoro González de León. During the museum’s 15th anniversary,  there was an intention to renovate some of its facilities, the restaurant was among those. After analyzing the requirements, a project was developed that offered a fresh, contemporary, and renewed image, while also addressing operational challenges and taking advantage of opportunities for functional improvement. HAEUNDAE GALBBI HOUSE

HAEUNDAE GALBI HOUSE has been rooted in one place since 1964 and has become a landmark representing Haeundae. It began as a small establishment with just three rooms, but around 1970, when the Gyeongbu Expressway opened and Haeundae Beach started attracting more tourists, the restaurant grew alongside the development of the area. Over time, three hanok-style buildings were constructed, and modern structures were added above them, resulting in its current form. Now operated by the third generation, it carries 60 years of history and is preparing for a century-long legacy. Caronte is the restoration project of a farmhouse in the Salento countryside, completed by Margine in 2025. In the lands between Lecce and Vernole, surrounded by olive trees and just a few kilometers from the sea, stands Masseria Caronte, a rural home where sheep were once raised and wool and yarn were produced. Over the years, after numerous businesses and years of abandonment, the structure underwent a major renovation and conversion into a restaurant in 2024.
