The rehabilitation of the KAPPO restaurant is guided by a strategy of reduction and clarification. Rather than introducing a new formal identity, the intervention focuses on refining the existing spatial conditions, strengthening what was already present and giving it renewed coherence. Architecture acts through subtraction, allowing space, light and material to regain precision and meaning.
The space was previously organised around a counter, complemented by a more dispersed occupation of the room. The project intensifies this logic, concentrating the experience around a single continuous bar with 12 seats. This decision reinforces proximity and focus, establishing a direct and deliberate relationship between the kitchen and the diners. Cooking is placed unequivocally at the centre, becoming a visible and shared process, where gesture, timing and material are exposed and valued.

The surrounding envelope was deliberately darkened, using deep grey tones approaching black. Shadow becomes an architectural tool, reducing visual noise and slowing perception. This controlled darkness prepares the gaze and directs attention towards the central area of activity. In contrast, the bar and work surfaces are defined by light ash wood and Lioz stone, materials chosen for their tactile and luminous qualities. Spatial hierarchy is therefore established through contrast rather than form. Like a stage, what is essential is illuminated; everything else recedes.

The ceiling plays a fundamental role in reinforcing this spatial and conceptual focus. Conceived as a continuous dark plane, it is intersected by irregular golden fissures inspired by the Japanese art of kintsugi. These lines cut through the ceiling as precise incisions, integrating lighting and structure while introducing a symbolic dimension to the space. More than a graphic gesture, the ceiling becomes an active element in shaping the dining experience, accompanying the rhythm of the meal and marking transitions, pauses and moments of intensity. Light is directed, intentional and temporal, reinforcing the idea that imperfection, time and transformation are integral to the experience.

The relationship with the street is filtered through dark linen curtains, reducing external distractions and reinforcing intimacy. Towards the back of the restaurant, circulation leads to a quiet antechamber preceding the sanitary area. This intermediate space is defined by a freestanding washbasin and a raw stainless-steel sheet, intentionally left coarse and only polished at its centre, where it operates as a mirror. The contrast between the unfinished surface and the reflective core reinforces the project’s overall approach, based on restraint and precision.
Throughout the project, architecture adopts a background role, supporting the ritual of cooking and dining without competing with it. The intervention aimed to demonstrate how a limited and carefully controlled set of architectural decisions can generate a focused, coherent and immersive spatial experience.
