PB’s product offering are extensive, with on-site baking beginning early in the morning and continuing throughout the day. The challenge for the studio was to ensure the demands of operational efficiency did not compromise the sensory quality of the space.The studio worked to thoughtfully integrate the practical demands of commerce with a warm ambiance for clients. They centred the design around the South Korean belief that asks spaces and products to go beyond the functional and contribute to a more meaningful experience for patrons. The studio wanted to avoid a solely transactional exchange. Even a simple coffee purchase can hold a touch of joy.
There are moments of stillness within the space—large swaths of simple wood evoke calm and balance amid the bustle. The honey-warmth of the bakery is rooted in a monochromatic palette of white oak and limestone, natural tones in harmony with and extracted from the hues of grain, flour and baked goods.
The layout of the bakery is thoughtfully structured to guide the flow of patrons. Products are displayed on the eastern wall and a central plinth. At the rear, a glass-enclosed cake laboratory offers a glimpse into the craft of baking and cake-decorating, inviting clients to pause and observe the artisanal process, perhaps even linger, before heading off to their next destination.
