Located in Itaim, a district of São Paulo that follows its rhythm of positioning itself as one of the outstanding vectors of attraction and development of the gastronomic sector of the city, Restaurante SAZ presents itself as the place of “excellence in simplicity. Good ingredients used in their entirety, worked with care and technique. A seasonal, authorial and cosmopolitan menu.”
The project, in partnership with the duo of chefs Sergio Suslick Mortara and Pedro Tiellet, was developed with the intention of translating part of this kitchen concept into a small room that shares its space with the bar and the area for preparing and finishing the dishes.
The desire to work with the “ingredient kitchen” and the environmental and social responsibility when selecting suppliers for SAZ is exposed in the house's identity manual with the intention of “Valuing the craftsmanship, to the detriment of the big industries. Go back to looking for seasonal products. The proximity to the land and the rural product is resumed”.
In this context, architecture only offers a space that can shape this plot and is associated with the restaurant's ideas to design a space that evokes proximity to the earth by choosing an earth-based coating as the main element of the hall, which envelops the floor and walls. A choice based on validating the choice condition of the chosen ingredients. There is no other reason for the choice than this reaffirmation through physical space.
The seasonality and the time marked by the modern calendar, often represented in a grid, is also present in the reason for choosing the 11x11cm piece that reappears on the table tops and in part of the fixed furniture.
