XXXI.studio unveils BAZ, a Lisbon restaurant where the architectural design demonstrates a complete commitment to material integrity and openness. Building on the studio’s philosophy of transparency, the project established a true performance of culinary service, where the boundary between chef and customer was intentionally dissolved.

The architectural narrative begins at the entrance, designed as a portal to a different reality. The intriguing facade is precisely cut to introduce a minimalist stainless steel box that marks the threshold. The entrance utilises stainless steel and raw wood, allowing the identity of the materials to speak for themselves.

The interior design is anchored in the concept of a dramatically open kitchen. Moving beyond the current trend of visible preparation areas, BAZ features a layout where every aspect of service is exposed. This transparency creates a tangible energy, transforming the act of cooking into a natural performance that defines the energy of the room.

The ground-floor layout is mediated solely by the project’s protagonist: a 15-metre counter. This bold, organic-shaped element divides the space along its entire length, creating an unusual 50/50 split between the service and dining areas. To one side, the bar and kitchen; to the other, the guests, a configuration that ensures both areas remain fully transparent to one another.

Crafted as an interpretation of the Japanese Shou Sugi Ban technique, the counter involved a meticulous process of sculpting, burning, brushing, washing, and varnishing wood. The result is an element with an organic texture "full of accidents" that serves as the soul of the space. This massive central object acts as an anchor, set against a calm and sophisticated backdrop that allows the energetic moments of the restaurant to take centre stage.

BAZ stands as a testament to XXXI.studio’s integrated approach, managing both the design and construction processes. By working directly with carpenters and manufacturers to address technical challenges onsite, the studio ensured that the final space showcases the intentional design whilst celebrating the integrity of its craftsmanship.

This project acts as a physical manifesto of XXXI.studio’s belief that architecture should be as honest and transparent as the experiences it houses. By stripping away the superficial and embracing the 'magic' of the raw process, BAZ stands as a reminder that when materials are allowed to speak for themselves, the resulting atmosphere is not just seen, but felt.
