Drawing inspiration from Crystalbrook Station and the the rugged Australian outback, CC’s Bar and Grill redefines the traditional steakhouse. Famous for its parillia grill steak, which comes directly from Crystalbrook Station (three-hours from Cairns), CC’s celebrates the best of Australian produce. The menu offers local ingredients and is derived from quality, fresh harvest that befits the earthy tone of the restaurant.
What was the brief?
CC’s is one of three food and beverage outlets we designed for the Baileys Hotel, located in Cairns, Australia. The client was after a sophisticated and contemporary twist to the classic Australian Steak House. The intention for the CC’s brand to become a regular with locals of Cairns, as well as a drawcard for guests of The Bailey Hotel and neighbouring hotels and visitors to Cairns.
How did you respond to the brief?
The interior environment needed to transcend both international appeal as well as local comfort. We wanted to provide the luxury environment of a five star hotel, while ensuring the context of the Australian culture and traditions were maintained. We drew inspiration from tropical Northern Queensland and the dusty and hard environment of inner Queensland farming territory. Timber, marble, stone and steel are the primary finishes, clearly evident in the cabinetry and bar elements.
A combination of banquettes, communal and bar dining options enables different groups and patrons to feel comfortable and relaxed, with the appropriate level of ambience and privacy. CC’s floor plan print and layout enables events and functions to coincide with intimate public dining.
A uniquely designed wine cellar and meat locker are the central focal point; showcasing the refined produce on offer in the restaurant.
