Barbeau Desrosiers led the redesign of Mastard, a neighborhood restaurant on Bélanger Street in Montreal, recently awarded its first Michelin star. Completed in spring 2024, the project grew out of a close collaboration with chef Simon Mathys and his team, united by a shared goal: to create a dining space that reflects the spirit and precision of their cuisine.


Rooted in a restrained, minimalist approach, the interior puts the focus on the food and the act of hosting. Soft lighting, clean lines, and a palette of natural materials rich in texture and grounded in earthy tones come together to create a calm, immersive atmosphere.

Acoustics were a key consideration from the outset and helped shape the overall layout. The space is organized into three main areas: a central open zone defined by a curved low wall and a suspended grid of textile panels that visually lower the ceiling while absorbing sound; intimate alcoves along each side; and a high counter near the kitchen, offering a more direct connection to the team at work.

The design strikes a balance between restraint and warmth. Understated and intentional, it reflects the quiet confidence of the restaurant’s culinary vision.
