A Layered Spatial Experience Uniting Architecture, Landscape and Gastronomy on the Aegean Coast
Salkım Restaurant is conceived as an ensemble of three distinct yet interconnected spaces embedded within the sloping topography of Akra Didim: the 495 m² Salkım À la Carte Restaurant, the 109 m² Signature Bar, and the 84 m² Lounge positioned at the lowest level. Each space has its own architectural character, while together they establish a shared language rooted in Aegean traditions of living, gathering, and dining.
Salkım is the Turkish word for a cluster of grapes growing from a single stem. The restaurant takes its name from the grapevines planted throughout its garden. The vineyard is not simply a naming reference, but a defining element of the project’s relationship with the surrounding landscape and its Mediterranean character.
Rather than consolidating the programme within a single architectural mass, the project distributes it across the site as a series of autonomous volumes. Movement between these volumes unfolds through terraces, pathways, stairs, and planted thresholds. In this way, the conventional linear interior sequence is transformed into an open-ended journey through architecture and landscape.
Following the natural contours of the site, the Salkım À la Carte Restaurant is raised above the ground on a pilotis system. This strategy reduces the building’s perceived mass while allowing the existing maquis vegetation and terrain to continue beneath it. The undercroft is treated not as residual structural space, but as an ecological ground where natural rock formations, Pistacia terebinthus, Myrtus communis, and aromatic vegetation are preserved.
A restrained material palette, informed by the natural colours and textures of the site, defines the architecture. Exterior surfaces are finished in earth-toned render, while interior walls and ceilings are covered with naturally textured plaster in a warm beige hue. Natural stone walls reinforce the project’s sense of locality and permanence, while timber beams function as both structural and spatial elements. Hanging planters filled with Platycerium bifurcatum introduce a suspended layer of vegetation into the interior.
Arrival is conceived as a gradual landscape sequence rather than a conventional architectural threshold. Natural-stone screen walls punctuated by carved square openings frame the entrance, while three-dimensional sculptures of starlings in motion create a subtle introduction to the identity of the project. A small vineyard occupies the eastern garden, and the balustrade extending along the southern change in level is reinterpreted as a living vineyard trellis supporting climbing plants.
The transitions between the restaurant, Signature Bar, and Lounge are established through the continuity of the landscape. The Signature Bar functions as a compact, view-oriented social focal point. At the lowest level, the Lounge is defined by timber structures and pergolas, creating a calm setting for informal gatherings and small-scale live music performances. Along the descent from the adult villas, Cinnamomum species and Trachelospermum jasminoides occupy the central void of the stair axis, forming a sensory passage shaped by scent, movement, and filtered light.
Restroom, service, and back-of-house areas are screened by natural-stone separation walls and embedded within the surrounding vegetation. Acacia farnesiana and beds of aromatic plants soften the transition between functional areas and the public landscape. At the restaurant entrance, nine terracotta planters of varying sizes contain geraniums, aromatic herbs, and Buxus sempervirens. Their arrangement evokes the planted courtyards of traditional Aegean houses and introduces a welcoming, domestic scale.
All roof surfaces are planted with Carpobrotus acinaciformis, transforming them into ecological covers that allow the architectural volumes to merge visually with the landscape. The existing stepped route extending from the adult villas to the adult beach has been preserved as one of the site’s most significant memory traces. Mature Pinus pinea trees remain undisturbed, with the architecture carefully positioned around them. Located to the west of the Signature Bar, the route allows guests to move between the villas and the beach, stop for takeaway coffee or refreshments, or pause on the steps to experience the sounds, scents, and views of the surrounding landscape.
At Salkım Restaurant, architecture is approached not as an isolated object placed within the landscape, but as a framework that reinforces the site’s existing topography, vegetation, and patterns of use. The project brings architecture, landscape, and gastronomy together as a continuous spatial experience shaped by the everyday life of the Aegean coast.
