This ambitious project includes 70 acres of farmland and various farm buildings including a traditional 19th century East. The farm buildings have been restored to accommodate organic winemaking, wine tasting rooms, visitor accommodation, classrooms and artisan workshops. Mixed grape varieties are planted on the predominantly south-facing land, while sheep graze, agriculturally and forestry and camp on other parts of the property.
The design is based on collecting all the different elements of the winery around a central, landscaped courtyard. The buildings have been re-clad in a variety of materials including metal, concrete, and wood, with simple, sturdy details to reflect the site's agricultural heritage. Large galvanized metal and wooden doors have been restored and positioned so that they slide back and reveal a framed view through the buildings of the courtyard and the cylindrical steel and wood wine barrels in the production areas.
Two large wine cellar qvevri are sunk into the ground under the open side of the east, where the long strands of hops were laid to dry in the 19th century. With the creation of the UK's very first Qvevri Cellar and the use of the building as a place for the preparation and storage of wine, the Oast has been restored to its former agricultural use.
